How are you on legumes?
Also, I'm big on making up a big batch of something and freezing it in appropriate portions. Not just "fish food", but actual meals. My dietary restrictions are similar, nutrition-wise, but also seem to be limited to things with a softer texture, so I've had to get creative with getting my protein in. :\
I'm kinda doing that now, making a huge meal, then portioning it down to something I can have. It's not bad, and helping me keep the numbers down, but I'm day three of a gigantic cobb salad. Ready to try a new meal now. :)
Hehehe! Yeah, salad doesn't exactly freeze well. But tasty! I'm whipping up a batch of chili (or chili-like substance) today. About half will get eaten in the next day or two, and the rest -- into the freezer. At any given point if I'm sick of something, I can always pull something different out of there. Tired of chili? Well, I can go with pulled pork, pot roast, tofu curry, red beans sans rice, 10-bean and barley soup, split pea, or Mediterranean skillet chicken and veggies. I think I make at least 2 meals per week in sufficient quantities to add to the stash, even as I deplete it on other days. :)
