2.3 miles (my turnaround marker) is a LONG ways. My goal was to get to the Williamson County Line by July, I may be able to do this in a few DAYS! It's only 4 miles away!

However, I really need to find a route that is uphill on the way out, and downhill on the way back. :)

Inthe last 30 hours I've had four hours of sleep. And to be honest with you, I haven't felt really all that sleepy the entire time, till now.

So, what has Jenn done in her 26 hours of wakefullness? Quite a bit in fact.

The iMac is now up and running, and getting along VERY nicely among the other computers. Following the Big O names we have fo rall our machines I've christened her Angel (She's from "somewhere else") although everywhere easily accessable still has her set up as fryMac (a fish in-joke).

I've completely reinstalled Big O and he's doing fine now with a brand new fresh copy of everything, including my old "Drive Dean Insane" Star Trek sound scheme, where I made ANYTHING and EVERYTHING make a sound. Which isn't bad if you're a Trekkie. Dean likes Trek, but not to these levels. ;)

Norman no longer holds backups of our computers, but is a fileserver. All my backups were getting old and scratched up and when they wee all reconsolidated, I realized I'd need some 10 DVD+Rs for it all. I just moved everything over to Norman for backing up. The other computer have local copies of most everything they need on a daily basis, and Norman will only be powered on when I need something from our backups.

R. Dorothy has been a trooper acting as go between for all this, she'll get a nice reinstall as a reward.

The truck has been cleaned out for the first time in god-knows-when. I tend to keep a messy truck, and there IS a box for trash I keep in there...I just take it out often. Not only did I forget that there was a floorboard there, but that pacing peanuts are REALLY hard to pick up.

The entire damned house is clean (minus my room). Every bit of it. Anything that isn't clean is in the dishwasher, the trash or in my room. My room, though...oi...so many wires....

I started biking again, now that I don't have my job and comics competing for my attention.

I'm planning on making Chicken McNuggets using one of the recipes floating out on the net. I have a completely new appreciation for fast food. These things take FOREVER to make!

I'm going to finally try to do some quick meditation, now that I'm actually tired, and get some sleep. What a strange 26 hours it's been.

Chicken McNuggets

Special Tools
Deep fryer

Ingredients
vegetable oil (in fryer)
1 egg
1 cup water
2/3 cup all-purpose flour
1/3 cup tempura mix (or 1/3 cup flour for a total of 1 cup if tempura mix is unavailable)
2 teaspoons salt
1 teaspoon onion powder
1/2 teaspoon Accent®
1/4 teaspoon pepper
1/8 teaspoon garlic powder
4 chicken breast filets, each cut into 6-7 bite sized pieces.

Cooking Your McNuggets
1. Beat the egg and then combine it with 1 cup water in a small, shallow bowl. Stir.
2. Combine the flour, salt, Accent®, pepper, onion powder and garlic powder in a one gallon size Zip Loc®
bag.
3. Pound each of the breast filets with a mallet until about 1/4 inch thick. Trim each breast filet into bite sized
pieces.
4. Coat each piece with the flour mixture by shaking in the Zip Loc® bag.
5. Remove and dredge each nugget in the egg mixture, coating well. Then return each nugget to the
flour/seasoning mixture. Shake to coat. Put nuggets, bag and all, in the freezer for at least an hour. Cover and
refrigerate remaining egg mixture.
6. After freezing, repeat the "coating" process.
7. Preheat oven and large cookie sheet to 375°
8. Deep fry the chicken McNuggets™ at 375° for 10-12 minutes or until light brown and crispy. (cook only
about 9 at a time)
9. Drain on paper towels 3-5 minutes.
10. Place deep-fried nuggets on preheated cookie sheet in oven and bake another 5-7 minutes.
11. Serve with your favorite McDonald's dipping sauce.
I didn't have the deep fryer, so I simply fried them in a small amount of oil in a skillet, and I screwed up step 6 (I put them in the freezer for an hour, then in the fridge while I slept, and came out with a Giant Block of Paste that I had to chisle the chicken out of. :) Also, instead of pounding the chicken breast, I used milanesa cut chicken breasts which were pretty thin to begin with.

But damn, they're good! Could use a little more breading but that's cause I couldn't do the third coating. Total cooking time, about three hours(!)
