Oh, gods, that does sound good. Simple and to the point, with the sausage's (hopeful) zing countered by the cheese, and all in harmony with the pico de gallo. Arg.. I'm tempted to try making something like that, though finding a decent similar sausage may be a challenge. Spanish chorizo, easy; but that may be too much in the paprika direction.
Maybe I'll come up with something new to compensate for the difference in ingredients - I'm feeling some tamarind marinated tiger prawns in addition might make for a really fun combo. =:9
