1) The Move to Seattle is an actual Relocation - not a visit.

2) The new Laptop is now taking over as the Main PC.. The Old Main PC will be a fileserver/media server in the living room. It'll be able to do a LOT more than the Pentium 2 could (such as playing SNES emulation to the TV!) It's not perfect though - I had to buy a USB keyboard to plug into the laptop, and the non-standard LCD display was NUTS to get working. I should really pick up a docking station.

3) There's no better tasting salsa than salsa you make yourself. :9

Personally, I'd give my right arm to move to Seattle.

In fact, because of the housing bust and the high taxes in Austin, our family won't be moving out of Florida for at least three years, which has given me time on what I would do personally. And I've been thinking about Seattle, too. The catch, though, is I'll be moving there either alone or with a girlfriend (which I still don't have) -- my parents thought of moving to Seattle several years ago, but nixed it because it was always gloomy. And I don't mind gloomy weather.

At least I'll know at least two people, including Jenn, if I move to Seattle in a couple of years or so.

Madre' Mias Super Salsa

You'll need 15 cerranos (little jalapen~os) or 7 regular green jalapen~os
(not pickled, fresh). 24 Ounces of caned whole tomatoes. 1 Tooth of Garlic
(or Garlic Powder to taste), salt.

Blend that baby.


:-) I've been tweaking my recipe ever since and the way i do it (for a one-person serve) is take two or three tomatoes, one or two chilis, clove of garlic, dice them up tiny, squeeze in half a lime and fry in oil for a while till the tomatoes "reduce" then let cool. You can add soy sauce too for a slightly different flavor.

Oh, wow - that's the recipe I lost! The one I just made is a "new" recipe from misremembering the one you posted. Same results, though. :9

14 ounces of diced tomato.
Dried onion
Garlic powder
Salt
Pepper
2 fresh jalapeños (not pickled)

Throw 7 ounces of diced tomatos into a blender with the two jalapenos. Add the onion flakes, garlic powder, salt and pepper. Mix (don't blend) it all together adding everything till the salsa tastes how you like it. Puree the mix in the blender. Once it's all pureed, add the other 7 ounces of diced tomato and lightly blend (but not puree). Once it's done, pour it out and serve. It won't be bright red - it'll be dark red to almost brown, but I like it that way. :D

I will give that a try this week.

I don't suppose you have a green salsa recipe you've picked up that you like? I consider myself to be a fair cook, but tomatillos continue to elude me - it never tastes the way I'm hoping.

Maybe you need an "Ask a real texan girl some food questions" kinda thread. :)

Make sure to make it with FOURTEEN ounced of tomatoes, not 4. That was a bad paste.

Anyways - when it comes to cooking, most of my dishes are biohazards or become EPA Sueprfund sites. I don't have any green salsa recipes or tomatillo ones (that's more New MExico than Texas) but if I did, I'd prolly have put several people in the hospital making them. :D
