So, while the fried chicken was good, something felt different about it. Not bad, just different. I figured it was maybe because I dry brined it instead of letting it sit in buttermilk overnight.

Nope. I dry brined it in whole milk, not buttermilk.

Thoughts Before Bed

Since becoming diabetic, I don't eat a lot of candy. But you know what I really miss? American Smarties (aka Rockets for the rest of y'all). Especially the older crunch-into-powder ones.
