Sep. 22nd, 2021 11:16 amI have got to get to bed, but my brain won't let me until this is fixed. Decided to go nuclear and just reinstall Linux Mint from scratch while hoping I can just swap one partition with another when its installed.
Maybe since this next step is going to take a few hours, my "YOU CAN'T SLEEP TILL EVERYTHING IS DONE" brain will allow me to sleep.

Sep. 22nd, 2021 11:16 amI just gave up, nuked the drive, and reinstalled Linux Mint. First time Mint has dissapointed me. I just needed to recreate the EFI directory to get everything back, and on Arch, you just create the partition, run grub-install and you're good.
For some reason, I was just blocked by one thing or another that kept that from happening.
It was my boneheaded move that killed the drive, though, so no strike against Mint. Just very dissapointed.

Sep. 22nd, 2021 12:54 pmLearn from my lesson folks:
1) Make copious backups. Even with all my redundant backups, I've lost at least 22 days of data.
2) Don't stay up until 3AM trying to fix something, even when your brain won't let you sleep because you left something undone. Take some nockout drops or something.
3) Don't do any computer heavy lifting on three hours of sleep, lest you delete the wrong folder and wipe out your entire 15 year archive of data.

5) Don't use Windex on your scanner on three hours of sleep.
Speaking of which I SLEEP NOW.
