Pho

Soup:
1 lb Boneless Chicken Thigh
12 oz Rice Noodles
2.5 qt Chicken Stock
6 tbsp Fish Sauce
1 tbsp Lemon Juice
1.5 tsp Sugar

Garnishes:
Bean Sprouts
Red Lead Lettuce (Sliced into strips)
Cilantro (Chopped)
Green Onions (Sliced into rings)
Shallots (Sliced into strips)
Lemon (sliced into wedges)

1) Heat enough water to cover the noodles until lukewarm (don't add the noodles).
2) Put the water and noodles in a bowl and allow to soak for 30 minutes.
3) Pour the chicken stock into a saucepan at medium heat and bring to a boil.
4) Add the chicken thigh to the stock and allow it to come to a boil again.
5) Reduce heat to low, and allow soup to simmer for twenty minutes.
8) Drain water from the noodles.
9) Remove the chicken thigh from the soup and slice into strips.
10) Add fish sauce, sugar and lemon juice to soup, then remove from heat.
11) Heat enough water to cover the noodles until boiling.
12) Add the noodles and boil until soft.
13) Drain water from the noodles.
14) Tasty noms.

I thought Pho was made with beef, but yeah, that sounds like good Pho.
