Recipe #1 - Emergency Chocolate Cake

Flour - 2 cups
Sugar - 1.25 cups (I tend to substitute sucralose to cut down on sugars)
Baking Soda - .75 teaspoons
Cocoa Powder - .75 cups
Water - 1.25 cups
Mayonnaise - 1 cup (yes, mayo)
Vanilla Extract - 1 tablespoon
Powdered Sugar - a sprinkle or so
Non Stick Spray

1) Preheat oven to 350.
2) Spray a 9 inch square cake pan with the non stick spray.
3) Mix flour, sugar and baking soda in a bowl.
4) Mix cocoa and water in another bowl.
5) Mix in the mayo and vanilla into the cocoa bowl.
6) Mix the cocoa/mayo/vanilla mixture into the flour bowl.
7) Pour that into the pan.
Bake about 40 minutes.
9) Remove from the pan and onto a cooling rack for 1 or 2 hours.
9) Dust with powdered sugar.
10) Or eat it right away, whatever floats your boat.
