So. Should I stick with my plan to make only three days of food at one time, or, go with a friend's suggestion of still making large batches of food, but freezing them so they're easily microwavable and won't spoil?

I'm not at all sure, actually. I used to just cook something simple up the night before, and eventually just abandoned lunch entirely, in favor of spending my lunch hour photographing the nearby buns instead. =:)

Nothing to say you can't mix it all up - leave something in the fridge, whether to take with you, or for dinner, or choose to make something for that day. Generally, I don't tend to cook much in advance, so I can always have whatever's feeling right at the time. I'd happily make exceptions, of course, for something relatively involved, like lasagne or pasties.
