So, when I batch cook, I try to make 15 meals of at least two different dishes. That gets me through the work week while still within my diabetic AND weight loss diets. I decided to try something different this week.
I made ten meals (5 turmeric rice, 5 chicken tikka masala). And I decided 5 meals would be Mango Pudding. I punched the smallest recipe I could make into my calorie/carb calculator, which came up with 16 servings at 15 carbs per serving (I try HARD not to have more that 15g in any one meal to keep my numbers low).
I made the recipe, and once I doled out five servings (and saved a remaining 11 for a cheat day) I realized each "meal" of mango pudding was....
...about a tablespoon.
Oh, well. I'll pick up something low carb for my dinners this week.
