When I started learning to cook, I decided to take a cue from Iron Chef Chen Kenichi and do everything with "a cleaver" like he did. Lissa just happened to have "a cleaver."

When I left for Texas, I bought a cleaver and it was nowhere near as good - turns out, they both use Chinese Cleavers. And they're AMAZING.
