Jun. 7th, 2021 03:38 amSo when I tried to make the full hot and sour soup for my family when they were here, the recipe came out incredibly bland, which blew my mind because when I make just the soup base, it's perfect.
So I decided to try again and see if it still failed, and sure enough, doing the full recipe the soup came out REALLY bland. So this time I started re-adding flavors in, and around the triple-the-recipe mark, it sort of came out. But now it was SWEET.
I think I can make it better by (1) not tripling the sugar in the recipe when I begin tripling the flavoring ingredients and (2) cutting out the tomato and red pepper, which are also sweetening the soup.
The recipe I have calls for those, but honestly, no where I've bought Hot and Sour soup has actually HAD those ingredients....
