I think I know what happened with that Steak with the bad rub. It doesn't say it in the recipe, but DOES in the description, that the rub is meant to be made seperately and stored. The recipe just says "add the seasoning to the meat." So instead of sprinkling or adding a small amoutn of seasoning, I coated it in it.

This was always my main problem with cook books. They just naturally assume you know what they're talking about, when I just followed the directions as they were listed. Admittedly, I cook a lot now, but I still tend to follow directions pretty straightforward. and that seemed straightforward to me.
