The two I hear about around Seattle are the Texas Smokehouse in Woodinville and Barbacoa on Queen Anne in Seattle. Local to the South SF Bay Area is Armadillo Willy's but over time there's been a noticeable difference between locations. Santa Maria Style is my favorite BBQ, but not found too far away from the central coast of California. A good Texas smoked brisket, Kalua pork, Louisiana pulled pork... Ok, now I'm hungry
Armadillo Willy's is a chain now, it started out as a two table hole-in-the-wall in Cupertino. The owner was big on BBQ contests and the first couple he added had well trained pit bosses. Sadly now it's which one and who's on shift, so yes very much a chain now.
Thanks, you've added two I need to check out. Most of the ones I encounter actually have the false opinion that those who BBQ in Kansas should be listened too. They make some kind of goo there with abused meat in the middle. ;-)
