Recipe #3 - Chinese Fried Rice

Cooked Rice - 6 cup
Chinese Roasted Pork - 6 slices (I have a lot of trouble finding this in Austin, so I will usually substitute Chinese sausage)
Shrimp - 18 (You REALLY want deshelled and deveined (serious about that deveining thing))
Shiitake Mushrooms - 3
Bamboo Shoots - 2 ounces
Green Peas - 1.5 ounces
Beaten eggs - 3
Green Onions - 1.5
Vegetable Oil - 3 tbsp.
Chicken Stock - 2.5 cups
Salt - 1.5 tsps.
Black Pepper - pinch
Soy Sauce - 1 tbsp.
Sesame Oil - .75 tsp.

Tiny cube = Whatever size cube feels good to you texture wise.

1) Dice the bamboo shoots into tiny cubes
2) Dice the green onion into tiny rings.
3) Remove the stems of the shiitake mushrooms, then dice them into tiny cubes
4) Dice the roast pork into tiny cubes.
5) Dice the shrimp into tiny cubes.
6) Heat the stock, bamboo and mushrooms on medium heat until boiling.
7) Once boiling, add the shrimp.
8) Once it starts boiling again, pour the soup through a sieve, saving the soup and boiled vegetables separately.|
9) In a separate bowl, mix 3 tablespoons of soup, soy sauce and sesame oil.
10) Heat the vegetable in another stockpot (or really large frying pan) over moderate heat.
11) Pour in the beaten eggs.
12) Once the eggs begin to set, add the rice and mix thoroughly.
13) Add the mushroom/prawn/shoot ingredients, the pork, onions, and peas,the salt and pepper and continue to fry.
14) Add the broth/oil/soy sauce seasoning in and mix before serving.

Recipe #4 - Tian Mian Jiang Pork

Side Pork - 1 pound
Cabbage - 6 leaves
Onion - 1
Bell Pepper - .75
Garlic - 1.5 cloves
Green Onion - 5
Ginger Root - 1 inch piece
Chilli Bean (XO) Sauce - 1 tbsp
Sweet Bean Paste/Sauce - 6 tbsp.
Soy Sauce - 2 tbsp.
Sugar - 2 tbsp. (I substitute sucralose)
Sake - 1.5 tbsp.
Sesame Oil - 2 tbsp.
Cooking Oil - 6 tbsp.

1) Cut the cabbage into 1 inch squares.
2) Peel and chop the onion into uneven bite size pieces.
3) Remove the seeds from the bell pepper, chop into uneven bite size pieces.
4) Cut the green onions into diagonal .75 inch lengths
5) Peel and slice the garlic cloves into thin slices.
6) Peel and slice the ginger into thin slices.
7) Cut the pork into strips of about an inch.
8) Mix the sweet bean paste, soy sauce, sugar, sake and sesame oil in a bowl.
9) In 3 tbsp of cooking oil, cook the cabbage, onion and green pepper until tender on high.
10) Remove the vegetables to a side dish./
11) Add 3 more tbsp. of cooking oil to the pan.
12) Cook the pork on medium heat until the color changes.
13) Add the garlic, ginger and green onion.
14) Stir in the chilli bean/XO sauce.
15) Add the vegetables to the pan.
16) Add the sweet bean paste sauce and stir fry till everything is coated.

Recipe #5 - Chicken Pho (specifically for Thomas)

The recipe I originally got this from calls for chicken - you can probably replace that with beef, tripe, chocolate. Whatever you like.

Chicken Thigh - 1 pound
Rice Noodles - 12 ounces
Chicken Stock - 2.5 quarts
Fish Sauce - 6 tbsps.
Lemon Juice - 1 tbsp.
Sugar - 1.5 tbsps. (Can be substituted with sucralose)
Bean Sprouts - 6.5 ounces
Red Leaf LEttuce - 3 leaves
Cilantro - 9 sprigs
Green Onion - 1.5
Shallots - 3
Lemon Wedges - 6

1) Soak the rice noodles in lukewarm water for 30 minutes.

While you wait:
2) Pour the chicken stock into a soup pot, and bring to a boil.
3) Add the chicken thigh.
4) When the pot comes back to a boil, reduce to low heat and let simmer for 20 minutes.
5) Remove the pot from heat.

6) Drain the noodles
7) Wash the bean sprouts.
8) Peel and thinly slice the shallots lengthwise.
9) Cut the green onions into thin rings
10) Cut the lettuce crosswise into .5 inch strips/
11) Chop the cilantro
12) Remove the chicken from the soup, cut it into .333 inch slices.

The recipe here doesn't say what heat the stove should be on to bring back to a boil. I like to boil quickly so I tend to use high heat.

13) Bring the soup in the soup pot back to a boil.
14) Add the fish sauce and lemon juice to the soup.
15) Add the sugar, and take the pot off the stove.
16) In a second sauce pan, boil some water.
17) Put the soaked noodles in the pan and boil until soft.
18) Drain off the noodles again and put aside.
19) Put the soup pot back on the stove and bring to a boil.
20) Put individual portions of the soup into bowls and pour soup over them. Add your veggies on top.

Recipe #6 - Jenn's Mexican Rice

(Not my mom's recipe...hers is awesome...but I like to think mine's better...don't let her know)

1 cup long grain white rice
1.5 cups water
.5 bell pepper
.5 white onion
.5 13.5 ounce can of diced tomatoes
1 tablespoon of tomato paste
2 tablespoons cooking oil
Jenn's Mexican Spice Mix to taste

Recipe #6a - Jenn's Mexican Spice Mix
5 parts salt
3 parts pepper
2 parts garlic powder
2 parts onion powder
1 part cumin

1) Add the cooking oil, rice and Mexican Spice Mix into a large boiling pot.
2) Set pot on high, and stir constantly as to not burn the rice.
3) just as the rice begins to turn brown, add the water and immediately cover
4) Once the water comes to boiling, set the heat to medium.
5) Add in the bell pepper, onion, tomato and tomato paste, mixing well until the rice becomes a uniform pinkish red color.
6) Recover and Wait five minutes.
7) Set the heat to low. Wait five minutes.

Some time around here, you may want to taste the rice and see if more seasoning is necessary. You'll want to do this BEFORE you finish cooking, so don't worry that the rice might still be hard. Check the taste.

8) Remove the pot from the heat, and wait five more minutes.
9) Uncover the rice, and fluff the rice using a rice paddle or spoon.

Recipe #7 - Caldo de Rez (untranslated from the original Mom-ish)

I haven't had a chance to sit down and figure this one out in measurements. So here's what she wrote verbatim.

I know she makes this in a GIGANTIC soup out about double the size of a normal pot. When she uses the russet potatoes, I know she cuts them into quarters, not sure about the red potatoes. The vegetables tend to be cut in half with the ends cut off to make them into largish bite sized pieces. Also, you can add a little of the Mexican Rice to the soup to make it less Pho-ish.

Caldo de Rez
Meat Shanks - 4 pounds meat

Boil meat for two hours.
Season with salt, pepper, garlic.
Once tender, add about ten small red potatoes and carrots to your liking.
Let them cook about 15 minutes then add rest of vegetables: Onion, Celery, Green Peppers, fresh tomatoes but into 1/8ths, corn on the cob (cut in half), cabbage cut into 1/8th pieces.
Add tomato sauce and cilantro.
Cook for 30 minutes to 45 minutes till done.
Taste for seasoning efore serving, now is the time to add more salt, pepper and garlic to taste.

Quick health update - I was apparently in a pretty bad state the last four days and didn't know it. Mom came up to check on me and spent two days taking care of me AND the apartment that was a wreck while I tried to get well.

I really didn't feel better till earlier today, and while I'm still coughing, I can talk now, and catch my breath, something I couldn't do for a while. Which was scary. Earlier today I did cough up a drop or two of blood, but haven't since. I really started clearing up just a few hours ago, where it doesn't hurt to breathe, breathing is mostly clear and I've stopped being a snot machine.
